To keep your gourmet mushrooms fresh, store them in the refrigerator. You can leave them in their original packaging for convenience. For optimal airflow and freshness, place the mushrooms in the main part of the refrigerator, not in the produce drawer. The fresher you eat them, the better their flavor and texture will be! For best results, consume your mushrooms within 7-10 days.
We don't forage our mushrooms, we grow them (or maybe they grow for us) on sterilized substrates, typically enriched sawdust, as required by each species.
Our mushrooms are carefully grown in a controlled environment, so you don’t need to wash them. Simply brush off any dirt with a dry brush. Washing is unnecessary and may impact their texture and flavor.
The American Mushroom Institute has issued a memo confirming that washing mushrooms is primarily done for cosmetic reasons, not for food safety. Since our mushrooms are grown indoors in controlled conditions, they’re not exposed to the risks faced by field-grown crops. There are no agricultural risks such as flooding, animal contamination, or unclean irrigation water.
Research confirms that fresh, unwashed mushrooms can help prevent the growth of spoilage bacteria and foodborne pathogens. In fact, there has never been a foodborne illness linked to fresh, unwashed mushrooms.

Mushrooms are incredibly versatile. The flavor and texture of each mushroom species may vary, so it’s important to select the right mushroom for your recipe.
Lion's Mane mushrooms are great for sauteing, stir-frying, roasting, and more. They're incredibly versatile and make an excellent meat substitute for Lion's Mane steaks or Lion's Mane Crab Cakes.
Oyster mushrooms are also great for sauteing, pan-frying, and stir-frying adding wonderful color and texture to a dish.
Although Reishi and Turkey Tail mushroom fruits are generally not used in cooking, there are numerous health benefits* and they are excellent for steeping into a nutraceutical tea, simmering into a broth, or creating a potent tincture.
